Obviously, I don't spend most of my time creating recipes, but I did make this one up on the spot yesterday when my brothers needed sustenance after a rather bad lunch (how was I supposed to know that 1 box of Macaroni and Cheese isn't enough for three people? It says "serves three" on the Nutrition Facts!), and it's not half bad.
Micah's Famous-esque Potato Chips! In Technicolor®!
Serves anywhere from two to eight.
Ingredients
3 medium-sized potatoes
Salt
Black pepper
Olive oil
Rosemary
Instructions
0. (because I'm adding this late in my post and don't want to go back and change all the numbers) Preheat the oven to 425 degrees Fahrenheit.
1. Wash the potatoes and slice them thin. I mean thin, like 1/16th of an inch thin. A mandoline would be cool, but I don't have one either. My advice is to do one end first, then plunk the potato cut side down on the cutting board and slice from the bottom up. It's fast once you get the hang of it.
2. This is important: blanch the potatoes in boiling, salted water for one minute. After they finish, immediately drain them and proceed to step three. Otherwise, they get all sticky and gross.
3. Place the potatoes on as many baking sheets as is necessary, but try not to overcrowd them.
4. Drizzle a tablespoon or two of olive oil over the potatoes. Make sure they get thoroughly coated.
5. Sprinkle on salt, pepper, and rosemary to taste.
6. Put the potatoes in the oven for 6-8 minutes, then take them out and flip them. Put them in for another 6 minutes. Drain on paper towels and enjoy!
